sous vide opakapaka keahole lobster w/ edamame puree, pumpkin flaxseed waffle, glazed purple carrots and charred red pepper coulis- Duo Restaurant, Four Seasons, Maui

i was lucky enough to assist executive chef Roger Stettler of Duo with the planning of this special occasion menu. Roger’s use of a savoury miniature waffle was an exciting concept to me, and i enjoyed it as a refreshing change to the usual starch component of a restaurant meal. Duo is a must-do in Maui, and while often upstaged by Wolfang Puck’s Spago (located one floor up), the relaxed elegance of Duo, complete with beach dining options and impeccable hospitality makes it an equally gratifying dining experience.
